Ingredients:

  • 7 oz (200 g) fresh mango, peeled
  • 6 oz (170 g) digestive biscuits
  • 4.2 oz (120 g) unsalted butter, melted
  • 1/3 cup (80 g) milk + 2 extra tablespoons
  • 8.8 oz (250 g) cold whipped cream
  • 2 sweetened lemon yogurts
  • 10.5 oz (300 g) cream cheese (like Philadelphia)
  • 1/3 cup (100 g) lemon juice
  • 11 sheets gelatine (8 + 3)
  • 3/4 cup (180 g) sugar (150 g + 30 g)

Instructions:

1. Make the Crust:

  1. Crush the cookies: In a food processor, pulse the digestive biscuits until finely crushed. If using a Thermomix, use the turbo function for a few seconds until you achieve a fine texture.
  2. Combine: Add the melted butter and milk. Mix for 10 seconds on speed 2-3-5 in the Thermomix or until a compact dough forms.
  3. Press into pan: Line the bottom of a 9-inch (24 cm) springform pan with the mixture. Press down firmly and smooth the surface with a spoon.
  4. Chill: Place the crust in the fridge to firm up while you prepare the filling.

2. Prepare the Filling:

  1. Mix creamy ingredients: Without washing the Thermomix bowl, insert the butterfly whisk and add the whipped cream, yogurt, and cream cheese. Mix for 1 minute on speed 3.5 until smooth.
  2. Soak gelatine: Soak 8 sheets of gelatine in cold water for 5 minutes.
  3. Heat milk: Remove the butterfly whisk, add the milk and 150 g of sugar. Heat for 3 minutes at 190°F (90°C) on speed 2 in the Thermomix, or use a saucepan over low heat until the sugar dissolves.
  4. Add gelatine: Stir in the drained gelatine into the warm milk. Mix for 10 seconds on speed 3.
  5. Combine mixtures: Let it cool for a few minutes before mixing the gelatine mixture with the cream cheese base. Pour the filling over the crust and chill for at least 3 hours.

3. Make the Topping:

  1. Soak remaining gelatine: Soak the remaining 3 sheets of gelatine in cold water for 5 minutes.
  2. Cook lemon juice: In the Thermomix or saucepan, heat 1/3 cup (80 g) of lemon juice with 30 g of sugar for 3 minutes at 190°F (90°C) on speed 1.
  3. Add gelatine: Stir in the drained gelatine and mix for 10 seconds on speed 3.
  4. Blend mango: Add the mango pieces and blend for 30 seconds on progressive speed 5-8-10, or use a blender until smooth.
  5. Top the cheesecake: Pour the mango mixture over the cooled cheesecake and refrigerate for at least 2 more hours, or overnight for best results.

Tips for a Perfect Cheesecake:

  • Choose a ripe mango. The sweeter and more fragrant the mango, the better your topping will taste.
  • Use quality cream cheese. The creaminess of your cheesecake heavily relies on this ingredient.
  • Ensure gelatine is well-hydrated before adding it to any hot mixtures. This will ensure an even and firm texture.
  • Be patient with chilling. Though the wait may seem long, it’s crucial for the flavors to settle and for the cheesecake to achieve the perfect texture.
  • Decorate with fresh mango slices or lemon zest before serving for an elegant touch!

Enjoy this delightful Lemon Mango Cheesecake that’s sure to impress your family and friends!
