Instructions

Preparing the Tenderloin:

  1. Open the Tenderloins: Make a longitudinal cut without separating them completely. Open each tenderloin as if it were a book.
  2. Season: Sprinkle salt and black pepper generously on both sides of the tenderloin.
  3. Stuff: Place 2 slices of bacon, 2 roasted peppers, and 2 slices of cheese in each tenderloin. Carefully close them up.

  5. Prepare the Varoma: Place the stuffed tenderloins in the Varoma tray and cover it.

Steaming:

  1. Prepare the Thermomix Bowl: Fill the Thermomix bowl with 4 cups of water and add the bay leaves.
  2. Cook: Set the Thermomix to Varoma temperature at Speed 2 for 33 minutes. Position the Varoma on top of the Thermomix.
  3. Reserve: Once cooking is complete, carefully remove the tenderloins from the Varoma and set aside.

  1. Chop the Ingredients: In the Thermomix bowl (without rinsing), add the remaining roasted piquillo peppers and onion. Chop for 5 seconds at Speed 8.
  2. Cook the Sauce: Scrape down the sides and add the cream and salt. Cook for 8 minutes at 212°F (100°C) on Speed 2.

  1. Slice the Tenderloins: Carefully remove the kitchen twine from the tenderloins and slice them into medallions.
