Welcome to our blog, where today we’re diving into a beloved traditional recipe that warms the heart and the belly. We’re excited to share our take on Migas del Pastor, a classic dish from the regions of Castilla la Mancha and Extremadura.
Perfect for chilly winter evenings, these hearty bread crumbs are typically paired with chorizo and grape, creating a delightful blend of flavors that’s bound to impress your family and friends. While traditionally enjoyed warm, they can be savored at any time of the year, served at room temperature for a delicious summer treat.
Thanks to the handy Thermomix, making this recipe is a breeze. So, let’s get started on making these scrumptious Migas del Pastor!
Ingredients:
- 8 oz (about 250 g) crusty bread (day-old preferred)
- 1 cup water (approximately 8 oz)
- 4 tbsp extra virgin olive oil
- 4 cloves garlic, peeled
- 6 oz (about 170 g) chorizo, sliced
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 cup white grapes (for serving)
Step-by-Step Instructions:
Prepare the bread crumbs:
- Place half of the bread (about 4 oz) into the Thermomix bowl.
- Set the Thermomix to Speed 5, no temperature for 6 seconds to break the bread into crumbs.
- Transfer the breadcrumbs to a bowl and repeat with the remaining bread.
Moisten the breadcrumbs:
- Sprinkle a little water evenly over the breadcrumbs. This step is crucial for achieving that fluffy texture.
- Cover the bowl with a damp cloth and set aside.
Make the garlic oil:
- In the Thermomix bowl, combine 4 tbsp of olive oil and the garlic cloves.
- Set to Varoma temperature (about 250°F / 120°C), Speed Soft with Reverse for 5 minutes.
Cook the chorizo:
- Once the garlic is golden, add the sliced chorizo to the bowl.
- Program for Varoma temperature, Speed Soft with Reverse for another 5 minutes.
- Remove the chorizo and garlic from the bowl, leaving the oil behind.
Combine breadcrumbs and oil:
- Add the moistened breadcrumbs and smoked paprika to the bowl with the olive oil.
- Set the Thermomix to Varoma temperature, Speed Soft with Reverse for 15 minutes.
- After 10 minutes, use a spatula to ensure the breadcrumbs are well-coated and mix evenly.
Finish the dish:
- When there are about 3 minutes left, return the cooked chorizo and garlic to the Thermomix, along with any remaining garlic cloves (unpeeled can be used for flavor).
- Serve:
- Your delicious Migas are ready to be served! Top with a generous handful of fresh white grapes for a delightful and sweet contrast to the savory chorizo. This combination is simply sensational!
Tips:
- For extra flavor, consider adding some chopped bell peppers or spinach to the mix.
- Pair with a nice red wine for a complete dining experience.
- Make ahead: These migas can be enjoyed later—they taste great even at room temperature!
