If you’re familiar with Japanese cuisine, you’ll know it’s one of the healthiest and most delicious in the world. We absolutely love it, and it’s becoming increasingly easy to find the ingredients to whip it up at home, making it feel like a dining experience straight from a restaurant. You’ll just need some tofu (available in any grocery store), red or yellow miso paste (found in specialty stores), Kombu seaweed (also available in specialty shops or the Asian section of your local grocery), and optionally a bit of Dashi, a traditional Japanese fish stock concentrate you can grab at an Asian market or the specialty aisle in bigger grocery stores like Whole Foods.
Without further ado, let’s get cooking our Miso Soup!
Ingredients
- 4 cups cold water (1 liter)
- 1 oz Kombu seaweed (a small piece)
- 1 medium daikon radish, sliced thin
- 2 green onions, chopped
- 2 tablespoons Dashi powder (optional)
- 2 tablespoons red or yellow miso paste
- 6 oz firm tofu, diced (about 170 grams)
- 1 tablespoon fresh lemon juice (about half a lemon)

Hydrate the Kombu:
- Fill a bowl with cold water and add the Kombu seaweed. Let it hydrate until it becomes soft. While the seaweed is soaking, prepare the daikon radish and green onions by slicing them into your preferred shape (julienne works great!).

Boil the water:
- In your Thermomix, add 4 cups of water and set it to 100°C (212°F), Speed 1 for 8 minutes to bring it to a boil. After it reaches a boil, toss in the Dashi powder (if using) and the daikon slices, then program the machine to cook for another 10 minutes at 100°C, Speed 1.

Strain the broth:
- Once done, strain the broth into a bowl and set aside the daikon slices. Pour the broth back into the Thermomix, adding a splash more water if it’s thick. Then, mix in the miso paste and lemon juice—program to mix without temperature, Speed 5 for 30 seconds.

Add the tofu:
- Next, gently fold in the cubed tofu, daikon, and rehydrated Kombu back into the broth. Set your Thermomix to 100°C, Speed 1 for 5 minutes to warm everything through.
- Serve and enjoy:
- Your delicious Miso Soup is ready! For an added touch, feel free to sprinkle some chopped green onions on top. This soup is almost medicinal—perfect for days when you’re feeling under the weather or just need a warm hug in a bowl.
