For the Meatballs:

  • 1 lb ground pork (approx. 500 g)
  • 2 slices of bread (white or whole wheat)
  • 1 oz milk (approx. 25 g)
  • 1 egg
  • Parsley, chopped (to taste)
  • Flour (for dusting)
  • Oil (for frying)

For the Walnut Sauce:

  • 3.5 oz walnuts (approx. 100 g)
  • 7 oz heavy cream (approx. 200 g)
  • 3.5 oz cream cheese (approx. 100 g; Philadelphia style)
  • 2 oz milk (approx. 50 g)
  • 2 oz white wine (approx. 50 g)
  • 7 oz chicken broth (approx. 200 g)
  • 1 tsp sugar
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch nutmeg

Step-by-Step Instructions:

Making the Meatballs:

  1. Prep the Mixture:
In the Thermomix bowl, add the slices of bread, milk, and egg. Blend at speed 5-7 for 10 seconds until you get a smooth mixture.

  2. Incorporate the Meat:
Add the ground pork, parsley, and a pinch of salt. Mix at speed 3 for 15 seconds. Remove from the bowl and set aside.

  3. Shape and Sear:
Form medium-sized balls with your hands and coat them in flour. Heat oil in a pan and lightly brown the meatballs on all sides. Place them in a pot once browned.

Preparing the Walnut Sauce:

  1. Chop the Walnuts:
In the Thermomix, add the walnuts and a pinch of salt. Chop at speed 10 for 15 seconds.

  2. Cook the Sauce:
Add the heavy cream, cream cheese, milk, white wine, broth, sugar, nutmeg, and pepper. Cook for 10 minutes at 194°F (90°C), speed 4.

  3. Taste and Adjust:
Taste the sauce and adjust with more salt or pepper as needed.

Final Assembly:

  1. Pour the sauce over the meatballs in the pot and simmer on low for 10 minutes, stirring occasionally to prevent sticking.

  2. Serve hot, and feel free to garnish with fresh parsley for a pop of color!

Chef’s Tips:

  • Mixed Meat Option: Use a combination of pork and beef for a more balanced flavor.
  • Ideal Texture: If you prefer a smoother sauce, blend at speed 7 for 30 seconds before adding to meatballs.
  • Perfect Pairing: Serve with white rice, mashed potatoes, or crusty bread to soak up the sauce.

Enjoy your homemade creamy walnut meatballs that are sure to be a hit at any table!
