  • 12 oz (340 g) clams, cleaned (or substitute with small clams or mussels)
  • 4 cups (32 oz) fish stock (or clam broth)
  • 1 cup (200 g) Arborio rice
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup diced tomatoes (canned or fresh)
  • 1/4 cup olive oil
  • 1/8 tsp saffron threads (or a pinch of turmeric for color)
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • 8 oz (230 g) mushrooms, sliced

Step-by-Step Instructions

1. Prepare the Clams:

  • Soak the clams in saltwater for at least 2 hours, changing the water several times to remove any sand.

2. Make the Broth:

  • In your Thermomix, add the shrimp shells and heads along with the fish stock.
  • Cook at Varoma temperature, Speed 4 for 3 minutes to release the flavors.
  • Place the Varoma basket with the clams on top of the lid and cook for an additional 10 minutes at Varoma temperature, Speed 2.
  • Strain the broth through a fine sieve and set it aside. Keep the clams for later use.

3. Prepare the Sofrito:

  • Clean the bowl, then add the minced garlic, parsley, and a bit of salt.
  • Chop for 10 seconds on Speed 4.
  • Add diced tomatoes and olive oil. Sauté for 5 minutes at 100ºC, using reverse speed (Speed Stir) to avoid chopping the mixture too finely.

4. Cook the Rice:

  • Add the sliced mushrooms and sauté for 5 minutes at Varoma temperature, reverse Speed Stir.
  • Pour in the Arborio rice through the lid and sauté for 2 minutes at Varoma temperature, reverse Speed Stir.
  • Add the reserved broth, saffron, and lemon juice. Cook for 12 minutes at Varoma temperature, reverse Speed Stir. Place the basket upside down on the lid to prevent splatters.

5. Finish and Serve:

  • Add the shrimp to the bowl and let the rice rest for 1 minute inside the Thermomix.
  • Transfer the clams to a serving dish, and pour the rice over them, gently stirring to soak in the broth. Your dish is ready to be enjoyed!
